The University of Cincinnati is an important part of the local food system in the amount of food purchased as well as the waste produced. This talk examines food management practices within the university and the elements related to its internal food system, including the functioning of UC's dining services and the conservation programs to diminish its environmental footprint. The University of Cincinnati dining services are compared to other university dining programs.
