The University of Cincinnati is an important part of the local food system in the amount of food purchased as well as the waste produced. This talk examines food management practices within the university and the elements related to its internal food system, including the functioning of UC's dining services and the conservation programs to diminish its environmental footprint. The University of Cincinnati dining services are compared to other university dining programs.

Lizbeth Ruiz is a second year master in Community Planning student in the University of Cincinnati's College of Design, Architecture, Art and Planning. She earned her degree in Urban Studies from Simon Bolivar University in Venezuela. Lizbeth has worked for Habitat for Humanity Venezuela, financial institutions, and a construction management firm. Currently she works as a Graduate Research Assistant for the Community Design Center at UC.

When Cuba lost access to Soviet oil in the early 1990s, the country faced an immediate crisis – feeding the population – and an ongoing challenge: how to create a new low-energy society. Cuba transitioned from large, fossil-fuel intensive farming to small, less energy-intensive organic farms and urban gardens, and from a highly industrial society to a more sustainable one. This film tells the story of the Cuban people’s hardship, ingenuity and triumph over sudden adversity – through cooperation, conservation and community, told in their own words.
